Every time you feed your starter, you get rid of some of that lovely culture. Why?

The reason you discard some of the starter every time you feed it is because otherwise your starter will become unmanageable and your jar won’t be big enough to maintain the 1:1:1 ratio.

But you don’t need to throw this discard away. You can use it in lots of other recipes, including crumpets.

You can keep your discard in a separate, larger jar and keep that in the back of your fridge.

Your discard will keep for several weeks, depending on how often you ‘top it up’.
